Airedale Apple Pie

There are no dog bits in this pie, and it doesn't taste doggy, for sure. It does have the colours of the Airedale in the finished pie: black and tan.

5 cups thinly sliced cooking apples
1/4 cup chopped pecans
3 tbsp rum!
pinch of salt
1/2 cup sugar
1/2 cup dark raisins
1 tsp orange peel
3 tbsp cherry jam
Enough pastry for a 9" double crust pie.

Procedure: Cook gently in a 2 quart saucepan for 15 minutes, stirring frequently. Fill pastry with apple mixture. Cover with top crust and decorate with a cut-out "A" for Airedale, or an Airedale cutout. Bake for 10 minutes at 450 degrees and then thirty minutes longer at 350 degrees.

This is a really good pie. I have made it many times in the past.
